Old time classic recipe coming straight from our youth... jam rolls!
Here's a fast & easy recipe to keep track in my blog. Thanks Vilma for reminding it to me!
I use strawberry jam here, but my dear friend Vilma brought one in our place for a bbq, a tasty one filled with Nutella ... hmmmm just gorgeous!!!
The result here is a fast prototyping, as I am busy and do not have the luxury for better photos or decoration... the essential is here though :)

Ingredients

  • 4 eggs
  • 1 cup (200 g) sugar
  • 1 tsp vanilla extract
  • 1 cup (125 g) self-raising flour
  • 1 cup (approx. 250 g) strawberry jam (or Nutella)
  • Powdered sugar for dusting

Instructions

  1. Preheat Oven: Set oven to 175°C (fan) / 350°F. Line a rectangular baking tray with parchment paper.

  2. Make the Sponge: In a large bowl, beat eggs with sugar and vanilla for several minutes until thick and pale.

  3. Add Flour: Gradually fold in the flour with a spatula by hand, being careful to keep the mixture airy.

  4. Bake: Pour the batter into the prepared tray and spread evenly. Bake for 20 min or until golden and springy to the touch.

  5. Prepare for Rolling: Immediately cover the hot sponge with a clean, slightly damp towel. Let it rest 2–3 min.

  6. Add Filling: Spread strawberry jam (or Nutella) evenly over the sponge while warm.

  7. Roll: Carefully roll the sponge from one short end to the other, using the parchment paper to help guide it.

  8. Decorate & Serve: Dust with powdered sugar or drizzle with melted chocolate. Slice into 1 cm pieces and serve.

Tips & Variations

  • Use Nutella, lemon curd, or any jam for a flavor twist.
  • Rolling while warm prevents cracks in the sponge.
  • Store in an airtight container at room temperature for 1–2 days.

  Enjoy!
