Looking for the perfect cake for a big anniversary full of chocolate and charm? Look no further, I got it up for you! For the 18 or 20 year of your child, your wedding anniversary, or any other big event of your life that you prefer baking by yourself instead of ordering something here's all you need (apart from tons of love for the celebrating person)...
PS: Special credits to my daughter and her friend that I gave them my kitchen and made this gorgeous cake. Having done all the cleaning, I deserve some credits too, no? ;)
Ingredients
For the Cake:
- 200 g T110 flour
- 2 pinches of salt
- 1 tsp baking powder
- 40 cl coconut milk
- 1 tsp vanilla extract
- 2 tbsp rum or your favorite liqueur
- 300 g dark chocolate (70% cocoa or more), melted and cooled
- 6 eggs
- 150 g brown sugar
For the Filling:
- 250 g mascarpone cheese
- 3–4 tbsp Nutella
For the Chocolate Ganache Topping:
- 200 ml full cream
- 200 g dark chocolate
For Decoration:

Fresh berries (strawberries, raspberries, blueberries, etc.)
Procedure
Prepare the Cake Batter:
Mix all cake ingredients with a mixer until smooth and well combined.-
Bake the Cake:
Pour batter into a buttered 20–22 cm cake tin. Bake at 180°C (fan oven) for ~30 minutes, until a skewer comes out clean. Let cool completely. -
Prepare the Ganache:
In a small saucepan over low heat, melt chocolate with cream, stirring constantly. Remove from heat and let cool slightly. -
Slice the Cake:
Using a large knife, carefully cut the cooled cake horizontally into two layers. Start by scoring the edges, then cut through the middle. -
Prepare the Filling & Assemble:
Mix mascarpone with Nutella until smooth. Spread evenly on the bottom layer, then place the top layer on top. -
Cover with Ganache:
Pour the cooled chocolate ganache over the cake, spreading evenly to cover the top and sides. -
Decorate & Chill:
Arrange fresh berries on top as desired. Refrigerate for a few hours to set before serving.
Serving Tips & Variations
- Use high-quality chocolate for a richer flavor.
- For extra elegance, add chocolate shavings or edible gold dust with berries.
- Slice carefully with a warm knife for neat layers.
- Best served chilled; store in the refrigerator for up to 2 days.
- Optional: replace coconut milk with regular milk or cream for a more traditional sponge.
