Greek Green Peas with Dill (Arakas me Anitho)

This traditional Greek vegetarian dish transforms simple green peas into a fragrant and flavorful meal. With the freshness of dill and the heartiness of potatoes, it’s a recipe even kids will love!

Ingredients

  • 1 kg frozen green peas
  • 2 fresh green onions, sliced
  • 2-3 potatoes, cut into large pieces
  • 5 tbsp olive oil
  • Salt & pepper to taste
  • A generous amount of fresh dill, minced
  • Water (enough to cover the ingredients)

Instructions

  1. Heat olive oil in a pot over medium heat. Add the onions and potatoes, sautéing for a few minutes.
  2. Stir in the green peas and plenty of minced dill.
  3. Add enough water to cover the ingredients, season with salt and pepper, and bring to a boil.
  4. Cover and simmer on low heat for 45-60 minutes, until the peas and potatoes are tender. Add water if needed to maintain a light sauce.

Serving Tips & Variations

Enjoy with crusty bread and crumbled feta cheese. For a richer version, pair it with a side of French pâté or serve with a squeeze of lemon.
