Colourful chicken, it's spring!


Finally it's spring, so time for more colors :) Taste this chicken with red and yellow peppers, accompanied with white rice and you will do it again I am sure! It's enough to uplift your moral after this long winter that we had this year... So, what do you say, shall we start?



Ingredients

chicken breasts
1 red pepper
1 yellow pepper
(1 onion only if you like it, I do not put in the tomato sauce)
tomatoes
salt, pepper, olive oil

Preparation

Put in a low casserole (I use a pressure cooker to gain time) some olive oil to cover the bottom and add the chicken breasts cut in slices.




Start to fry the chicken.
In the middle of the frying, add the red and yellow peppers also cut in slices. Finish frying.





Add the tomatoes, the salt and the pepper. Add enough water to almost cover them.





Cover and let it cook in low temperature for about 45min or until the meat is cooked and the tomato sauce starts to thicken.





Cook separately, enough white rice to accompany the chicken. See the result and judge for yourself! Here, family really appreciated today :)
