Ingredients
(for a 20 × 30 cm / 8 × 12 inch dish)
- 2 packs petit-beurre biscuits (or digestive biscuits)
- 1 large can fruit in syrup (peaches, pears, or mixed fruits)
- 1 box jello powder for 500ml jello (cherry or strawberry work especially well)
Pastry Cream
- 2 cups milk
- 2 egg yolks
- 4 tbsp flour
- 3 tbsp cornstarch
- ½ cup sugar
- 1 tsp vanilla
- 2 tbsp butter
Instructions
- Prepare the biscuit layer
Drain the canned fruit, reserving the syrup. Lightly dip the biscuits in the syrup and arrange them in a rectangular dish, making two layers. Refrigerate while preparing the cream. - Make the pastry cream
Heat 1½ cups milk with the sugar. Dissolve the flour and cornstarch in the remaining ½ cup milk, then add to the saucepan. Cook over medium heat, stirring constantly until thickened. - Finish the cream
Remove from heat and quickly whisk in the egg yolks. Return briefly to low heat, add butter and vanilla, and stir for 2–3 minutes until smooth. - Add the cream layer
Let the cream cool slightly, then spread evenly over the biscuits, sealing the edges well. Refrigerate until slightly firm. - Prepare the jello
Prepare the jello according to package instructions and let cool completely. - Finish the dessert
Arrange the fruit over the cream layer. Slowly pour the cooled jello over the fruit using a spoon to avoid disturbing the layers. - Chill
Refrigerate for several hours or overnight until fully set.
