A Greek classic with a twist! Tender chicken is oven-baked with okra and potatoes in a rich tomato sauce, creating a flavorful, wholesome dish.
Ingredients
- 1 medium chicken
- 500g okra (fresh or frozen)
- 4-5 potatoes, sliced
- 3-4 ripe tomatoes (or 1 can tomato sauce)
- 1 small onion, sliced
- 1 garlic clove, minced
- Fresh parsley, chopped
- Olive oil
- Salt & pepper to taste
Instructions
- Place the chicken in the center of a large oven pan.
- Arrange the sliced potatoes on one side and the okra on the other.
- Pour the smashed tomatoes over the okra, then add the onion, parsley, and garlic.
- Drizzle olive oil over everything, season with salt and pepper, and mix the okra gently.
- Add enough water to cover half of the okra and potatoes.
- Bake at 180°C (fan) for about 1 hour and 30 minutes.
- Serve warm and enjoy the irresistible aroma filling your kitchen!

- Pair with crusty bread to soak up the delicious sauce.
- If using fresh okra, trim the tops carefully to avoid stickiness.
