Chicken with Exotic Okra (Kotopoulo Me Bamies)

A Greek classic with a twist! Tender chicken is oven-baked with okra and potatoes in a rich tomato sauce, creating a flavorful, wholesome dish.

Ingredients

  • 1 medium chicken
  • 500g okra (fresh or frozen)
  • 4-5 potatoes, sliced
  • 3-4 ripe tomatoes (or 1 can tomato sauce)
  • 1 small onion, sliced
  • 1 garlic clove, minced
  • Fresh parsley, chopped
  • Olive oil
  • Salt & pepper to taste

Instructions

  1. Place the chicken in the center of a large oven pan.
  2. Arrange the sliced potatoes on one side and the okra on the other.
  3. Pour the smashed tomatoes over the okra, then add the onion, parsley, and garlic.
  4. Drizzle olive oil over everything, season with salt and pepper, and mix the okra gently.
  5. Add enough water to cover half of the okra and potatoes.
  6. Bake at 180°C (fan) for about 1 hour and 30 minutes.
  7. Serve warm and enjoy the irresistible aroma filling your kitchen!

Serving Tips & Variations

  • Pair with crusty bread to soak up the delicious sauce.
  • If using fresh okra, trim the tops carefully to avoid stickiness.
