Greek Rice pudding (Ryzogalo)

A classic Greek dessert loved by all ages—especially children! Creamy, lightly sweet, and delicious with a sprinkle of cinnamon on top.

Ingredients

  • ½ cup round rice (dessert or pudding rice)
  • ½ L milk
  • 3–4 tbsp sugar
  • 1 tsp vanilla extract or 1 packet vanilla sugar
  • Ground cinnamon (for serving)

Instructions

  1. Cook the rice: In a small casserole, bring ½ cup of water to a boil. Add the rice, lower the heat, and simmer for about 3 minutes until most of the water is absorbed.
  2. Add milk & vanilla: Pour in the milk and vanilla. Cook over moderate heat for about 25 minutes, stirring occasionally.
  3. Sweeten: Add the sugar and continue cooking for 5 more minutes until creamy.
  4. Serve: Pour into 5 small bowls and let cool slightly. Sprinkle with cinnamon before serving.

Serving Tips & Variations

  • Serve warm or chilled, depending on preference.
  • Add a twist with orange zest or a few drops of rose water.
  • For extra creaminess, replace part of the milk with fresh cream.
