Semolina pudding (halvas) yummy!


Easy and cheap sweet today that you will love! Home will smell cinnamon and will bring people together :) For those that have never tried something similar before, it will surprise you in a nice way, guaranteed... It is my husband's favorite sweet, so much, that this year I even did it as his birthday cake! And it is so fast to prepare it, that I did it just to surprise him before leaving for a nice weekend in Paris :) Enough talking, let's start cooking!

Ingredients

1 1/2 semolina medium grated
1/2 cup of sunflower oil
optionally nuts, almonds, raisins 


Syrup
4 full cups of water
2 cups of sugar
2 spoons of honey
lemon zest
cinnamon (powder and stick)


Procedure


Put in a medium casserole the ingredients for the syrup and let it boil for 2-3 min. Take it out of the fire.





Put in a big frying pan the oil and let it warm for 2-3 min.






Add the semolina and let it fry by stirring it all the time.





Continue until it gets a nice golden color.






 When it is done, (BE CAREFUL !) add the semolina in the syrup with a spoon little by little! It is extremely hot so you can get burnt. I insist, in doing it slowly and little by little.




Once this delicate part is over, put the casserole back to MEDIUM fire and with a big wooden spoon continue stirring ALL the time until most of the water is absorbed by the semolina and it becomes quite thick.





Take it out of the fire, cover with a towel and the casserole cover like in the photo. Let it rest for about 15 min.






Then, empty the mixture to a nice cake mold. Leave it to cool completely. Turn it out to a large serving dish and sprinkle with cinnamon if you like.  Admire, smell and taste!
