1 1/2 cups semolina (medium-grated)
1/2 cup sunflower oil
Optional: nuts, almonds, raisins
Syrup:
- 4 cups water
- 2 cups sugar
- 2 tbsp honey
- Zest of 1 lemon
- 1 cinnamon stick
- 1 tsp ground cinnamon
Instructions:
- Prepare the Syrup: Boil water, sugar, honey, lemon zest, cinnamon stick, and ground cinnamon for 2-3 minutes. Remove from heat.
- Fry the Semolina: Heat oil in a pan for 2-3 minutes. Add semolina and stir constantly until golden.
- Combine: Gradually add semolina to the hot syrup, one spoonful at a time. Stir gently to combine.
- Cook: Return to medium heat, stirring constantly until most of the liquid is absorbed and the pudding thickens (5-10 minutes).
- Rest: Cover and let it rest for 15 minutes.
- Serve: Transfer to a cake mold, cool completely, and sprinkle with cinnamon.
