Red Chicken with Spaghetti (Kotopoulo Kokkinisto Me Makaronia)

A comforting Greek favorite, this tender chicken is simmered in a rich tomato sauce and served over spaghetti. Simple, delicious, and perfect for the whole family!

Ingredients

  • 4 chicken legs
  • 500g spaghetti
  • 4 ripe tomatoes (or 1 can tomato sauce)
  • Olive oil
  • Salt & pepper to taste

Instructions

  1. In a large pan, heat olive oil and fry the chicken until golden brown.
  2. Add the tomato sauce and enough water to cover the chicken.
  3. Season with salt and pepper, cover, and simmer for about 45 minutes.
  4. Remove the chicken and some sauce, setting them aside.
  5. Add more water to the pan, bring to a boil, and cook the spaghetti as directed on the package.
  6. Serve the pasta with the chicken and pour the tomato sauce on top. Enjoy!

Serving Tips & Variations

  • Sprinkle with grated cheese like kefalotyri or parmesan.
  • Add a cinnamon stick to the sauce for extra depth of flavor.
