Greek Red Chicken with Spaghetti (Kotopoulo Kokkinisto)

A comforting Greek favorite: tender chicken simmered in a rich tomato sauce, with spaghetti cooked directly in the sauce for maximum flavor! Simple, delicious, and perfect for the whole family!

Ingredients

  • 4 chicken legs
  • 500g spaghetti
  • 4 ripe tomatoes (or 1 can tomato sauce)
  • Olive oil
  • Salt & pepper to taste

Instructions

  1. In a large pan, heat olive oil and fry the chicken until golden brown.
  2. Add the tomato sauce and enough water to cover the chicken.
  3. Season with salt and pepper, cover, and simmer for about 45 minutes.
  4. Remove the chicken and set aside.
  5. Add the spaghetti directly into the sauce, along with a little extra water if needed. Cook until al dente, stirring occasionally.
  6. Return the chicken to the pan or serve on top of the spaghetti. Pour extra sauce over and enjoy!

Serving Tips & Variations

  • Sprinkle with grated cheese like kefalotyri or parmesan.
  • Add a cinnamon stick to the sauce for extra depth of flavor.
