Oat & Chocolate Chunk Cookies

Great and healthy cookies full of oat flakes but also with chocolate!
Let your children play and make them for you, sooooo easy :)

Ingredients

  • 120 g oat flakes
  • 100 g chocolate chunks
  • 240 g all-purpose flour
  • 2 eggs
  • 150 g brown sugar
  • 120 g butter, softened
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1 pinch salt

Instructions

1. Preheat Oven
Preheat oven to 180°C (fan). Line baking trays with parchment paper.

2. Prepare the Dough
Soften the butter. In a bowl, mix all ingredients together until just combined (do not overmix).

3. Shape the Cookies
Form small or large cookies with your hands and place them on the trays, leaving space between them.

4. Bake
Bake for about 10–12 minutes, depending on size, until lightly golden.

5. Cool & Serve
Let cool slightly before serving. Enjoy!


Tips & Variations

  • Chill the dough for 15 minutes for thicker cookies.
  • Add nuts or dried fruits for extra texture.
  • For a fun twist, sandwich two cookies with ice cream.
  • Do not overbake to keep a soft center.
  • Store in an airtight container for up to 5 days.
  • Flavor variations:
    • Cranberry & white chocolate: replace half the chocolate chunks with dried cranberries for a sweet-tart contrast
    • Raisin & cinnamon: add ½ tsp cinnamon and 100 g raisins for a “breakfast cookie” style
    • Apricot & almond: add chopped dried apricots and replace 30 g flour with ground almonds
    • Chocolate & orange: add 1 tsp orange zest for a citrus aroma with the chocolate
    • Granola-style: mix in 2 tbsp honey and extra oats for a more rustic, chewy texture
