Greek Ekmek kadaifi (with custard and whipped cream)


An easy (don't be scared of the lengthy descriptions :) and mouthwatering sweet full of syrup and oriental spices that you will find in lots of countries. Find here the Greek version that uses walnuts and mostly western creams like custard and whipped creams. Try it and I promise, that the house will be full of smells afterwards and it would be difficult to stop at only one piece! (Note: Kadaifi is an oriental dough that looks like thin spaghetti)

 


Ingredients

Base:

400gr kadaif (special dough that you can find in oriental shops that look like thin spaghetti)

150gr butter (melted)

100gr walnuts (coarsely grated)

600ml fresh cream (35% fat for the whipped cream)

cinnamon powder (to sprinkle on top)

Custard cream (or get a ready mix where you just add milk)

1 1/2 lt of milk

200gr sugar

2 eggs

2 vanillas

160gr corn flour

150gr butter

Syrup

350gr water

350gr sugar

1 cinnamon stick

zest of lemon

2-3 drops of lemon juice

Procedure

Base:

Preheat the oven in 170 degrees of Celsius.

Defrost overnight the dough in the fridge if needed. 

Open with your hands the dough to become as airy and fluffy as possible. Do not be afraid to scratch it on itself as it helps it to become better. Once done, put it in an oven dish of 24x32x6cm (I am using a pyrex one).

Melt the butter and pour it all over to wet all of it.

Bake for 30min to get a nice golden color.

Syrup:

Boil for 4min all the ingredients and let it cool. 

When the dough is ready, take it out of the oven and pour homogeneously the syrup all over (cool syrup, warm baked dough).

Custard cream & whipped cream

In medium-fire, boil the ingredients in a small casserole while stirring continuously with a hand mixer to avoid lumps or burning and sticking to the bottom until it gets a thick texture but still easy to spread.

Spread the cream on top of the moistened dough and let it cool completely.

Whip the cream until it gets stiff and spread it on top of the previous preparation.

Use a spoon to make stripes on the cream. Decorate with the grated walnuts and the cinnamon powder.
