Yummy focaccia (with greek feta and oregano)
My favorite 3 ingredients (dough, feta and oregano) all in one recipe! And who can resist in a good focaccia in any case? If you share the same values ;) go for it! Of course, we are open minded here, feel free to adapt to your own favorites!
Ingredients
750gr flour (Type 00 special pizza)
2 1/2 teaspoons of salt
1 cube of fresh yeast (or 2 packages of dry one)
450ml lukewarm water
5 tablespoons of extra virgin olive oil (3 for the dough and 2 for the topping)
200gr of greek feta cheese (crumbled)
some dried oregano
Procedure
- In your mixer's bowl add the flour, mix the salt with a spoon, add the oil and in the center add the crumbled yeast and finally pour the water.
- Using the kneading tool, knead until an homogeneous but still quite moist dough.
- Either cover and let double in size for about an hour or two, or the way I am doing it, use a steam oven for 20min at 35 degrees of Celsius that will make it rise faster and better :)
- Brush with olive oil an oven pan of about 30x50cm and empty the dough.
- Use your hands to press and stretch out the dough to fill the whole pan.
- Spread the feta, the olive oil and the oregano on top.
- With your fingers press all over the dough to make dips in it.
- Put in the (unheated so far) oven and bake at fan and 200 degrees of Celsius for about 25-30min. That way, the dough will have the time to rise a bit one last time :)
