Anniversary Cake full of chocolate!


Looking for the perfect cake for a big anniversary full of chocolate and charm? Look no further, I got it up for you! For the 18 or 20 year of your child, your wedding anniversary, or any other big event of your life that you prefer baking by yourself instead of ordering something here's all you need (apart from tons of love for the celebrating person)...

PS: Special credits to my daughter and her friend that I gave them my kitchen and made this gorgeous cake. Having done all the cleaning, I deserve some credits too, no? ;) 

Ingredients 

For the cake:

200gr flour T110

2 pinces of salt

1 baking powder

40cl of coconum milk

some vanilla

2 spoons of rhum or your favorite liquer

300gr dark chocolate (70% of cocoa at least) - melted in the microwave oven and cooled

6 eggs

150gr of brown sugar

For the filling:

250gr of mascarpone cheese

at least 3 spoons of nutella 

For the topping of chocolate ganache:

200cl of full cream 

200gr of dark chocolate

For the decoration:

fresh berry fruits

Procedure

  1. Mix well using a mixer all the cake ingredients and bake at 180 degrees of Celsius in a preheated oven at air for about 30min. Let it outside to cool.
  2. In the meantime, prepare the chocolate topping. In a small casserole and low heat melt the chocolate with the cream stirring constantly with a wooden spoon. Once completely melt, take it out of fire and let it cool too.
  3. Cut the cake horizontally in 2 layers using a big knife (delicate procedure, start by cutting a bit all around the edges and then proceed in the middle cutting). Separate the 2 layers.
  4. Mix the mascarpone with the nutella and spread on top of one of the layers and cover with the other.
  5. Cover with the chocolate topping, speading it homogeneously all over to cover the cake.
  6. Decorate as you wish with the fresh fruits.
  7. Let it set in the fridge for the few hours.   
Needless to say, it will steal the impressions and no one will sto at one serving!!!! All the best!
