- 100 g dark chocolate (baking chocolate)
- 50 g butter
- 60 g sugar
- 30 g flour
- 2 extra-fresh eggs
- Pinch of salt
- 8 chocolate squares (carreaux), for the centers
Instructions
- Preheat Air Fryer: Preheat the air fryer to 180°C (350°F).

Melt Chocolate & Butter: Melt chocolate with the butter and a pinch of salt until smooth.

Microwave: heat in 20–30 second bursts, stirring each time.

Stovetop: melt gently in a heatproof bowl over simmering water (bain-marie).
Let cool slightly.

Whisk Eggs & Sugar: Beat eggs with sugar until pale and slightly fluffy.

Add Flour: Stir in the flour until just combined.

Combine Batter: Add the melted chocolate mixture and mix until smooth. Let the batter rest 5 minutes.

Prepare Ramekins: Butter four ovenproof ramekins (about 180 ml) and lightly dust with flour or line with small parchment circles.

Fill & Add Chocolate Center: Pour batter halfway into each ramekin. Add 2 chocolate squares in the center, then cover with the remaining batter, dividing evenly.

Bake: Place ramekins in the air fryer and bake 8–10 minutes, until edges are set but the center remains soft.

Serve: Let rest 1 minute, then serve warm.

- Serve warm for the classic gooey lava center.
- Dust with powdered sugar or serve with vanilla ice cream.
- Fresh raspberries or strawberries pair beautifully with the chocolate.
- Use identical ramekins so cakes bake evenly.
- Do not overbake — the center should stay soft.
- Best eaten immediately; leftovers can be reheated briefly in the microwave.
- No air fryer? Bake at 200°C (fan oven) for 9–10 minutes in small ramekins instead.
