Ingredients
For the Salmon
- 300–400 g salmon loin (baron de saumon), cut into bite-size pieces
- 1 tablespoon honey
- 1 tablespoon mustard (Dijon works great)
- 1 tablespoon olive oil
- 1 garlic clove, minced
- ½ teaspoon paprika
- Salt and black pepper to taste
For the Vegetables
- 1 zucchini, sliced
- 1 bell pepper, sliced
- 1 small eggplant, cut into cubes
- 2-3 florets of a broccoli
- 3 paris mushrooms, sliced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Optional: ½ teaspoon garlic powder or dried oregano
Instructions
- Prepare the marinade: In a bowl, mix the honey, mustard, olive oil, minced garlic, paprika, salt, and pepper.
- Season the salmon: Add the salmon pieces to the bowl and gently toss until they are well coated with the marinade.
- Cook the salmon in the air fryer: Preheat the air fryer to 190°C (375°F). Arrange the salmon pieces in a single layer in the basket and cook for 7–9 minutes, until cooked through and lightly caramelized.
- Prepare the vegetables: In a large bowl, toss the zucchini, bell pepper, eggplant, and broccoli with olive oil, salt, pepper, and optional seasoning.
- Air fry the vegetables: Cook them in the air fryer at 190°C (375°F) for 12–15 minutes, shaking the basket halfway through, until tender and slightly crispy.
- Serve: Serve the salmon bites warm with the air-fried vegetables on the side.
Serving Tips & Variations
- Serve with rice, quinoa, or couscous for a complete meal.
- Add a squeeze of fresh lemon juice before serving.
- Sprinkle with fresh parsley or dill for extra freshness.
- Add chili flakes or cayenne pepper if you like a little heat.
- The salmon bites also work well in wraps, salads, or grain bowls.
Storage
- Refrigerator: Store leftovers in an airtight container for up to 2 days.
- Reheating: Reheat gently in the air fryer at 170°C for 3–4 minutes or in a pan.
- Freezing: Salmon can be frozen for up to 1 month, though the vegetables are best eaten fresh.
Alternative Cooking Methods (Without an Air Fryer)
Oven Method
- Preheat the oven to 200°C (400°F).
- Prepare the salmon bites and vegetables as described in the recipe.
- Spread the vegetables on a baking sheet lined with parchment paper and drizzle with olive oil.
- Place the salmon pieces on the same tray (leaving a little space) or on a separate baking sheet.
- Bake for 12–15 minutes, until the salmon is cooked through and the vegetables are tender and lightly roasted.
- For extra color and caramelization, switch to broil/grill for the last 1–2 minutes.
Pan Method
- Heat 1 tablespoon olive oil in a large non-stick skillet over medium heat.
- Add the salmon pieces and cook for 4–5 minutes, turning gently until golden and cooked through.
- In the same pan or in a separate skillet, sauté the vegetables for about 8–10 minutes until tender and slightly caramelized.
