These crispy chicken bites are quick, juicy, and full of flavor. Chicken breast pieces are seasoned with olive oil, paprika, and Parmesan, then coated with breadcrumbs for a delicious crispy crust. Cooked in the air fryer, they become golden on the outside while staying tender inside. Perfect for a quick dinner and delicious served with roasted vegetables.
Ingredients
For the chicken- 3 chicken breasts
- Salt, black pepper to taste
- 2 tbsp paprika
- 1–2 tbsp olive oil
- 1 egg
- 2 tbsp grated Parmesan (Parmigiano)
- Breadcrumbs
For the vegetables (optional)
- 3 baby potatoes
- 1 small eggplant
- 1 zucchini
- Mushrooms
- Olive oil
- Salt and pepper
Instructions
- Cut the chicken breasts into small bite-size pieces.
- Pat the chicken dry with paper towels to help the coating become crispy.
- Place the chicken pieces in a bowl and season with salt, pepper, paprika, olive oil, the egg and grated Parmesan.
- Mix well so the chicken is evenly coated.
- Sprinkle breadcrumbs over the chicken and gently press them onto the pieces so they stick.
- Place the chicken pieces in the air fryer basket in a single layer.
- Cook at 180–190°C (350–375°F) for about 12–15 minutes, shaking the basket halfway through.
- The chicken should become golden and crispy on the outside while remaining juicy inside.
Cook the vegetables (optional)
- Cut the eggplant, the zucchini and the baby potatoes into chunks.
- Mix all vegetables with olive oil, salt, and pepper.
- Cook in the air fryer at 180°C (350°F) for about 15–18 minutes, shaking once during cooking, until tender and lightly browned.
Serving Tips & Variations
- Serve the crispy chicken bites hot with the roasted vegetables. They also pair well with yogurt sauce, tzatziki, a fresh green salad
- Dry the chicken well before seasoning to achieve a crispier crust.
- Do not overcrowd the air fryer basket, so the air circulates properly.
- You can replace chicken breast with boneless chicken thighs for even juicier bites.
- These chicken bites are also great in wraps, salads, or pita sandwiches.
- Store leftovers in the refrigerator for up to 2 days.
- To reheat: air fryer recrisp: 3–4 minutes. They will become crispy again.
