Meatloaf with Eggs (Greek-Style Rolo Kima)

A classic Greek comfort dish, this meatloaf (Rolo Kima) surprises with hidden boiled eggs inside. Baked with flavorful potatoes, it’s a hearty meal perfect for family gatherings.

Ingredients

For the Meatloaf: (like my Homeburgers)

  • 700g ground meat (veal & pork)
  • 1 onion, minced
  • 1 egg
  • 1 slice old bread (soaked & drained)
  • 2 tbsp chopped parsley & mint
  • 1 tsp oregano
  • Salt & pepper to taste
  • 2 tbsp olive oil

Extras:

  • 4 boiled eggs
  • Some flour
  • Potatoes, peeled & cut
  • Salt, pepper, oregano
  • Olive oil & lemon juice

Instructions

  1. Boil the eggs, let them cool, and peel them.
  2. Mix all meatloaf ingredients until well combined.
  3. Flatten the meat mixture, place the boiled eggs in a row, and wrap to form a loaf.
  4. Lightly coat the loaf with flour and place it in a baking dish.
  5. Arrange the potatoes around it, seasoning with salt, pepper, oregano, olive oil, and lemon juice. Add water to almost cover the potatoes.
  6. Bake at 180°C (fan) for about 1 hour 30 minutes, adding water if needed.
  7. Slice and serve with the flavorful potatoes.

Serving Tips & Variations

  • Serve with a crisp Greek salad and tzatziki.
  • Try adding grated cheese inside for extra flavor.
