Greek Briam (Oven-Roasted Summer Vegetables)

A light yet flavorful Mediterranean dish bursting with summer vegetables. Serve with feta cheese for an authentic Greek experience!

Ingredients

  • Eggplants
  • Peppers
  • Potatoes
  • Zucchini
  • Tomatoes
  • Onions
  • Olive oil
  • Salt & pepper
  • Fresh parsley

Instructions

  1. Prep the vegetables: Wash and chop everything into bite-sized pieces.
  2. Season & mix: Toss the vegetables with olive oil, salt, pepper, and parsley.
  3. Bake: Place in a baking dish, add enough water to cover halfway, and bake covered at 180°C for about 1 hour.
  4. Serve: Enjoy warm with feta cheese or your favorite side.

Tips & Variations

Add garlic or oregano for extra flavor. Try it with a side of Greek yogurt or crusty bread. Substitute or mix in seasonal veggies based on availability.
