- Eggplants
- Peppers
- Potatoes
- Zucchini
- Tomatoes
- Onions
- Olive oil
- Salt & pepper
- Fresh parsley
Instructions
- Prep the vegetables: Wash and chop everything into bite-sized pieces.
- Season & mix: Toss the vegetables with olive oil, salt, pepper, and parsley.
- Bake: Place in a baking dish, add enough water to cover halfway, and bake covered at 180°C for about 1 hour.
