Tabbouleh, the healthy and so fresh salad!

When I first discovered tabbouleh salad, the whole family immediately loved it—especially during hot summer days. It’s fresh, light, healthy, and incredibly easy to prepare.

There are many variations of tabbouleh depending on personal taste, and that’s exactly what makes this salad so enjoyable. Once you know the basics, you can easily adapt it with your favorite ingredients.

Ingredients

(Serves 4)

  • 150 g fine bulgur
  • 150 ml water
  • 2 tomatoes, finely chopped
  • 1 small cucumber, finely chopped
  • 1 small onion or spring onions, finely chopped
  • A large handful of fresh parsley, chopped
  • Fresh mint leaves, chopped
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • Salt and pepper, to taste
  • Optional: a handful of raisins for a sweet touch

Instructions

  1. Place the bulgur in a bowl and pour over the same amount of water. Let it soak for 1–2 hours until soft.
  2. Fluff the bulgur with a fork.
  3. Add the chopped tomatoes, cucumber, onion, parsley, and mint.
  4. Season with olive oil, lemon juice, salt, and pepper. Mix well.
  5. Cover and refrigerate for at least 30 minutes before serving to allow the flavors to develop.
  6. Serve chilled with extra mint leaves on top.

Serving Tips & Variations

  • Add raisins for a slightly sweet contrast.
  • Feta cheese also works beautifully in this salad.
  • Serve as a light lunch, side dish, or with grilled meat and pita bread.
  • Best enjoyed very fresh and cold during warm weather.
