French brioche bread
Brioche is a french fluffy dough bread that includes eggs, milk, sugar and butter, it's something between a bread and a cake and it tastes like heaven!!!
You can find various versions in several other countries like in my home country, Greece, that we call them "tsourekia".
It's a recipe that I just loooooove and was missing from my blog despite the fact that I am baking them often, so let's start 2019 with this recipe ....
Ingredients
200ml of milk (warm)
60gr of sugar
1.5 teaspoon of salt
2 eggs
500gr flour T45 (or a bit more)
45gr fresh yeast (crumbled)
70gr unsalted butter (softened)
Procedure
- Mix the first 5 ingredients in a mixer with the kneading tool for 1min at speed 1.
- Add the yeast and knead for 10 more minutes at speed 2.
- Add the butter and knead for 5 more minutes at speed 2.
- If the dough is too sticky add a bit more flour, but not much.
- Cover and let in a warm place to double in volume for 1h30min.
- Knead again softly and then split in 6 equal parts.
- Turn each part to a long thin cylinder of about 3cmx30cm.
- Make 2 braided breads using 3 parts for each.
- Place them in a buttered oven tray, cover them with a towel and let them rest again for almost an hour to raise again.
- Beat an egg and brush them on top. You can add some almond powder too if you like or any other decoration.
- Put them in the oven and bake with fan at 180 degrees of Celcius for about 30min or until they get a nice golden color.
- Take them out, let them cool for 10min and try them warm already. They are to die for!!!
