Greek Salad (Horiatiki)

A refreshing summery salad, Greek salad (Horiatiki) is a staple of Mediterranean cuisine, featuring ripe tomatoes, crisp cucumbers, briny olives, and hard feta cheese, all kissed by olive oil and charmed by oregano. Perfect as a single dish in a hot summer day.

INGREDIENTS

  • 2 medium riped tomatoes, chopped (any form will o)
  • ½ cucumber, sliced
  • 1/2 red onion, thinly sliced
  • 100g (3.5 oz) feta cheese, crumbled (or added on top and crumbled once served)
  • 5-6 olives (Kalamata are the best!)
  • 2 tbsp olive oil
  • ½ tbsp red wine vinegar
  • ½ tsp dried oregano
  • Salt to taste

INSTRUCTIONS

  1. In a large bowl, combine tomatoes, cucumber, red onion, and olives.
  2. Drizzle with olive oil and red wine vinegar.
  3. Sprinkle oregano, and salt to taste.
  4. Toss gently and top with crumbled feta cheese.
  5. Serve immediately with crusty bread.

SERVING TIPS & VARIATIONS

  • Pairs well with grilled meats or seafood. Try adding capers or green bell pepper for a variation.
  • In Crete, they add in the bottom of the bowl, dakos or ntakos, a dried bread/rusk that will absorb all the juices and mix well with the rest (any dried bread will do instead of dakos).
