INGREDIENTS
- 2 medium riped tomatoes, chopped (any form will o)
- ½ cucumber, sliced
- 1/2 red onion, thinly sliced
- 100g (3.5 oz) feta cheese, crumbled (or added on top and crumbled once served)
- 5-6 olives (Kalamata are the best!)
- 2 tbsp olive oil
- ½ tbsp red wine vinegar
- ½ tsp dried oregano
- Salt to taste
INSTRUCTIONS
- In a large bowl, combine tomatoes, cucumber, red onion, and olives.
- Drizzle with olive oil and red wine vinegar.
- Sprinkle oregano, and salt to taste.
- Toss gently and top with crumbled feta cheese.
- Serve immediately with crusty bread.
SERVING TIPS & VARIATIONS
- Pairs well with grilled meats or seafood. Try adding capers or green bell pepper for a variation.
- In Crete, they add in the bottom of the bowl, dakos or ntakos, a dried bread/rusk that will absorb all the juices and mix well with the rest (any dried bread will do instead of dakos).
