Greek Potato Salad – A Simple Mediterranean Side Dish

This Greek-style potato salad is fresh, simple, and full of Mediterranean flavor. Unlike heavier mayonnaise-based versions, this one is dressed with olive oil and lemon juice, making it light and perfect for spring and summer meals.

It pairs beautifully with grilled meats, fish, or vegetables and is an ideal side dish for BBQ gatherings.

Ingredients

  • Potatoes
  • Red onion, finely sliced
  • Fresh parsley, chopped
  • Olive oil
  • Lemon juice
  • Salt & pepper
  • Oregano (optional)


Preparation

  1. Boil the potatoes until tender (around 20 min depending on the size), then let them cool slightly.

  2. Cut into chunks or slices.

  3. Add the red onion and chopped parsley.

  4. Season with salt, pepper, and a little oregano if using.

  5. Drizzle generously with olive oil and fresh lemon juice.

  6. Toss gently and serve warm, at room temperature or refrigerated.
