You like banana breads? We do and I am full of inspirations those days, so after my vegan recipe, check my latest one:

the Coco-Choco! A rich and indulgent twist on classic banana bread, combining chocolate and coconut for a moist, flavorful treat. Perfect for breakfast or a sweet snack!

Ingredients

  • 2 ripe bananas
  • 120 ml vegetable oil (e.g., coconut oil)
  • 120 g brown sugar
  • 80 ml milk
  • 180 g all-purpose flour
  • 20 g cocoa powder
  • 80 g coconut flour
  • 2 tsp baking powder
  • 1 pinch salt

Instructions

  1. Preheat & Prepare Pan: Preheat oven to 180°C (fan). Grease a loaf pan.
  2. Mash the Bananas: In a bowl, mash the bananas with a fork until smooth.
  3. Mix Ingredients: Add oil, sugar, and milk. Mix well. Then add flour, cocoa powder, coconut flour, baking powder, and salt. Stir until combined.
  4. Pour & Decorate: Pour the batter into the prepared loaf pan. Decorate the top as desired (banana slices, coconut, or chocolate chips).
  5. Bake: Lower oven temperature to 175°C and bake for about 30–35 minutes, or until a toothpick inserted comes out clean.
  6. Cool & Serve: Let cool slightly before slicing. Enjoy warm or at room temperature.

Tips & Variations

  • Add chocolate chips for extra richness.
  • Sprinkle shredded coconut on top before baking.
  • If using coconut flour, ensure batter is not too dry—add 1–2 tbsp milk if needed.
  • Keeps well for 2–3 days or can be frozen in slices.
