🍽️ What I cooked...
- Homemade basil pesto with spaghetti, cherry tomatoes and, of course, extra Parmigiano Reggiano — there is never enough! 😄
- Pinsas, using my authentic Italian pizza recipe
- Spanakotyropita, made with ready-made filo but based on my own recipe, also included in [Vivian is Cooking GREEK]
- Greek sea bream in the oven, simply baked with olive oil, herbs and lemon slices, served with oven fries
- Mexican fajitas with tacos, guacamole and a little Greek touch: tzatziki!
- Homemade burgers, made like my biftekia recipe and served with savory waffles based on my vegetable balls recipe [Vivian is Cooking GREEK]
- French madeleines from my latest cookbook [Vivian is Cooking BAKING]
- Oat chocolate cookies, another reliable favourite from [Vivian is Cooking BAKING]
- Pastitsio, one of my all-time favourites from the blog and my GREEK cookbook. I unfortunately forgot to take a photo, but I did save some portions in the freezer for my students who will soon be leaving — a little taste of home to take with them. ❤️ — [Vivian is Cooking GREEK]
It was another delicious week, and one that was very much appreciated by the whole family — I received quite a few compliments! From the fresh basil pesto and summer fish to Greek favourites, homemade burgers and a sweet ending with madeleines and chocolate cookies, it was a lovely way to enjoy the last weeks of summer.
📖 A little shortcut for your kitchen
And if you’re tired of searching through thousands of recipes online every time you want to cook something, my cookbooks are made to be simple, reliable and delicious recipes you can actually use — printed on paper and right there next to your countertop when you need them.
You can find Vivian is Cooking GREEK and Vivian is Cooking BAKING and bring a little of my kitchen into yours!
And even though I forgot to photograph some of the cooking, that's perhaps the most authentic part of these diaries: sometimes we're simply too busy enjoying the food! ❤️
