Welcome to my first Vivian Is Cooking Diary! ❤️ This week was a delicious mix of Greek favourites, homemade bread, baking and a few new recipes I wanted to try. Hope that they will inspire your own home cooking!
🍽️ What I cooked...
- Biftekia with potatoes in the oven — [in Vivian is Cooking GREEK]
- Homemade wholegrain bread
- Easy Pavlova cups with ready-made meringues, ice cream, mascarpone Chantilly, strawberries... when too lazy to do the real thing but still crave for it — [Pavlova recipe on my blog - in Vivian is Cooking BAKING]
- Creamy chicken, mushroom & pasta - exquisite! ⭐- have to post the recipe.
- Spicy oven-baked chicken with rice, made in my Greek clay dish - have to write you the recipe.
- Leek & feta tart — [similar to my zucchini tart]
- Homemade pizza (using lots of ricotta that is becomeing our new favorite on top of pizzas)
- Greek youvarlakia soup — [Vivian is Cooking GREEK] - perfect on a cooler day or when ill.
- Homemade iced tea with honey and slices of peaches to flavor it
- Fried homemade bread with scrambled eggs & bacon (using leftovers of the bread)
- Savory feta waffles, inspired by my kourou tyropitakia recipe — [Vivian is Cooking GREEK]
- Fresh green salad with homemade croutons
- Keftedakia made with leftover yuvarlakia mixture, served with air-fryer Greek fries and a fresh salad
- Peach & Nectarine Upside-Down Cake - just gorgeous, have to try it ❤️
- Mary Berry’s crusty salmon with lemony sauce - The salmon was a real success with the family, although we found the lemon sauce much too lemony for our taste. Next time, I’ll definitely reduce the amount of lemon.
It was a busy week in the kitchen, but a very enjoyable one — lots of homemade food, a few creative ways to use leftovers, and some new recipes alongside old favourites. And that’s exactly what I hope these Cooking Diaries will capture: the real, everyday cooking that happens in my kitchen. ❤️
