Savory Feta Waffles

These savory waffles were the result of a delicious kitchen experiment. Instead of shaping the classic tyropitakia kourou into small cheese pies, I simply turned the dough into waffles—and I couldn't be happier with the outcome! They are wonderfully crispy and golden on the outside, while remaining soft, fluffy, and packed with cheesy goodness inside. Perfect for breakfast, brunch, lunch, or even a quick snack served with a fresh salad.

Ingredients

Dough

  • 125 g butter, softened
  • 300 g cake flour
  • 125 g plain yogurt
  • 2 eggs
  • A splash of olive oil (to grease your hands if needed)
  • 2–3 drops of apple cider vinegar
  • 150 g feta cheese, crumbled
  • 100 g grated Emmental and Gruyère cheese (or any other mix you prefer)


Instructions

  1. In a large bowl, combine the butter, flour, yogurt, eggs, and vinegar. Mix until you have a soft, smooth dough.
  2. Fold in the crumbled feta and the grated cheeses until evenly distributed.
  3. Divide the dough into 12 equal pieces and shape them into balls, about the size of a tennis ball.
  4. Cover with plastic wrap and let the dough rest in the refrigerator for 15 minutes.
  5. Preheat your waffle iron well. Place one dough ball in each section of the waffle iron and cook until the waffles are deeply golden and crisp. The cooking time will vary depending on your waffle maker.
  6. Transfer the waffles to a wire rack for a few minutes before serving to help them stay crisp.

Serving Suggestions

These savory waffles are delicious served warm with:

  • A fresh Greek salad
  • Tomato and cucumber slices
  • Yogurt or tzatziki
  • Smoked turkey or ham
