 I am excited to experiment with banana breads lately and after my Vegan Banana Bread-ilicious!  and the Coco-choco Banana Bread, here's my own inspiration that I consider very succesful. Consider this as an elevated version of a banana bread :)
An elevated banana bread packed with flavor and texture—moist from yogurt, rich from butter, and filled with nuts and juicy blueberries. A perfect balance between comfort and indulgence! 

Ingredients

  • 2 eggs
  • 2 ripe bananas (+1 optional for decoration)
  • 120 g melted butter or margarine
  • 120 g brown sugar
  • 200 g all-purpose flour
  • 2 tsp baking powder
  • 80 g strained Greek yogurt
  • 40 g almond powder
  • 40 g grated walnuts
  • ½ cup blueberries
  • 1 pinch salt

Instructions

1. Preheat & Prepare Pan: Preheat oven to 180°C (fan). Grease a rectangular loaf pan.

2. Beat the Eggs: In a bowl, beat the eggs for a minute until slightly frothy.

3. Mash the Bananas: Add the bananas and mash them completely with a fork.

4. Add Wet Ingredients: Stir in the melted butter, sugar, and Greek yogurt. Mix well.

5. Add Dry Ingredients: Add flour, baking powder, and salt. Mix gently until combined.

6. Fold in Add-ins: Add almond powder, walnuts, and blueberries. Mix lightly to distribute evenly.

7. Pour & Decorate: Pour the batter into the prepared pan. Optional: decorate with a sliced banana on top.

8. Bake: Bake for about 50–60 minutes. Check at 45 minutes—cake is ready when a toothpick comes out clean.

9. Cool & Serve: Let cool for 10–15 minutes before slicing. Enjoy with family and friends!


Tips & Variations

  • Use very ripe bananas for best sweetness and flavor.
  • Replace blueberries with chocolate chips if preferred.
  • Toast the walnuts beforehand for deeper flavor.
  • Keeps well for 2–3 days or can be frozen in slices.
