Beef soup with vegetables

Weather is extremely cold today in our place, although it should be the beginning of the summer... As you can imagine, I came up again with the idea of a soup :) Not any soup, but one that has everything, meat for proteins and vegetables for vitamins. It will warm your heart, in days like this one, that you wake up end of May and face snow in the mountain...




Ingredients


600 gr of beef (of good quality and no fat)
1 onion
potatoes, carrots, zucchini, tomatoes, celery
salt, pepper, olive oil
some tomato sauce




Procedure  

Wash the meat and put it in a big casserole (pressure cooker) with water up to 1/3. Let it boil for a few minutes and throw with a spoon the extra "foam" that will be created from the meat.






Cut the vegetables in big cubes and add them to the casserole. Add the salt, the pepper, the olive oil and the tomato sauce.







Close the pressure cooker and cook for about 30 min or until the meat is tender enough.







Your soup is ready, you can just add fresh pepper and some parmiggiano reggiano cheese to boost the taste! Hoping, that the summer will eventually come :)
