Souvlakia, culinary delight in small pieces!

When we refer to greek fast food, we think immediately of "souvlakia". Souvlakia, for those that do not know them, is pieces of meat in a skewer that we cook in the bbq or grill. If you happen to visit Greece, you can try souvlakia everywhere, as there are many fast foods that serve them. But, I will reveal today, the way that I make them as it is so easy to make them and they are sooooo delicious that it's a pitty to wait to buy them :)
The most difficult part, is to keep the meat tender and moist after cooking, and trust me, my way succeeds !

Ingredients

2 pork tenderloins
1 tablespoon of mustard (here, the one with seeds)
salt, pepper, oregano, olive oil

zucchini, eggplants
salt, olive oil

Procedure

Cut the meat in small cubes.

Add the salt, the pepper, the oregano, the mustard and pour some olive oil.

Mix well. Leave the meat for 1 hour in the fridge.

Then, put the pieces of the meat in skewers.

Cook them in the bbq.

Serve with vegetables like zucchini and eggplants that you have cut in medium slices, added salt and olive oil, cooked also in the bbq.
Both souvlakia and vegetables will drive you crazy !
